“Potato Expert Recommends Refrigerating Spuds to Reduce Food Waste”

Contrary to common belief, storing potatoes in the fridge rather than a cupboard or storage bin may be the best option, as suggested by potato expert Luke Willcox from Seasonal Spuds. To combat food waste, Willcox advises keeping potatoes cool in the refrigerator.

Previously, the conventional wisdom was to store potatoes in a dry and cool spot away from the fridge; however, it has been found that they stay fresher for longer when chilled at temperatures below five degrees. According to Luke, official guidance from WRAP (Waste and Resources Action Programme) recommends storing potatoes in the fridge.

By refrigerating potatoes, they can remain fresh and sprout-free for over three times longer than at room temperature, leading to a significant reduction in food waste, as reported by the Express.

Glad’s food experts mention that potatoes can last three to five weeks in a pantry and approximately three to four months in the refrigerator.

While the Food Standards Agency (FSA) previously discouraged storing potatoes in the fridge due to concerns about cold affecting natural sugars and potentially forming acrylamide during high-temperature cooking, recent studies have shown that refrigeration does not increase acrylamide formation.

The FSA website highlights that a recent study reviewed by the Committee on the Toxicity of Chemicals in Food, Consumer Products, and the Environment (COT) indicates that storing potatoes in the fridge at home does not significantly raise the risk of acrylamide formation compared to storing them in a cool, dark place.

To minimize acrylamide risk when cooking, the FSA suggests following cooking instructions on packaging for starchy foods like roasties and aiming for a “golden yellow color or lighter” when preparing them.

To ensure potato longevity, it is essential to prevent moisture and sunlight exposure while allowing for adequate airflow. While potatoes can be stored in a cupboard or storage container, refrigeration is recommended for optimal freshness.

According to Luke, storing potatoes in a dark, cool, dry place is crucial to prevent greening and rot. He advises using a net, paper bag, or cotton bag with good air circulation to keep potatoes fresh for longer.

Refrigerating potatoes not only helps maintain freshness but also aids in cutting down on grocery expenses. Luke emphasizes the importance of storing ingredients correctly to preserve their quality and reduce the need to replace spoiled produce, thus saving money.
