The debate on how to store eggs continues, with some advocating for refrigeration while others prefer room temperature storage.

In the United States, eggs are washed and sanitized, necessitating refrigeration due to the removal of their natural protective coating. In contrast, eggs in the UK do not undergo this process, yet many British individuals still opt for refrigeration to prolong freshness.

Dean Harper, the chef at Harper Fine Dining, blends traditional French techniques with modern methods, showcasing a deep understanding of culinary science and ingredient preservation. He stresses the importance of storing eggs in the fridge but in specific conditions.

According to Dean, maintaining a cool and consistent temperature between 37F to 40F (3-5 degrees Celsius) in the main compartment of the fridge is ideal for egg storage. Placing eggs in the fridge door is discouraged as temperature fluctuations from frequent opening and closing can accelerate the breakdown of egg whites.

Dean explains that watery egg whites result from the loss of carbon dioxide and moisture as eggs age. Even slight changes in texture due to moisture loss can impact the quality of dishes like poached eggs.

In addition to refrigeration, proper storage in egg cartons is crucial to maintaining egg quality. Storing eggs in cartons prevents absorption of strong odors from other foods and protects them from light exposure, which can hasten deterioration.

Sophie Trueman, the UK&I Country Director for Too Good To Go, advises against strictly relying on best-before dates for egg disposal, as they indicate peak freshness rather than safety. She suggests using sensory cues like smell and taste to determine egg freshness.

To assess egg quality, crack open the egg and check for any unusual odors. Fresh eggs should have a neutral smell, so any sulfur-like or unpleasant odors indicate spoilage. Conducting a small taste test before consuming the entire egg is also recommended to ensure freshness.
